Baihao Yinzhen belongs to white tea, one of China’s six major tea categories. As the highest-grade tea among white teas, Baihao Yinzhen has long been known as the “Fairy of Teas”! It is recorded in the book *Fuding White Tea* that “currently, one mu of tea garden can produce less than 2 kilograms of Baihao Yinzhen a year. The picking period of Baihao Yinzhen is extremely short; it can only be picked once a year in the early spring, and the picking is concentrated within just a few days after the buds emerge. It is the top-grade among white teas, covered with white downy hairs, consisting entirely of tea buds. Moreover, spring tea is fresher and sweeter, with plumper and fuller buds. The downy hairs on the buds of Baihao Yinzhen white tea have an extremely high amino acid content. The processing technique of white tea emphasizes no stir-frying or rolling, which allows the tea down to be completely preserved.
